General Mulligans
These four taunt cards can be exchanged for different ones or different combos of themselves. If you switch them, healthy taunt minions are still necessary replacements.
Mogu'shan Warden and Unpowered Steambot - Both similar. I prefer MW only because US can feel useless early on. Both make for a great stall or powerful minion with Inner Fire but need an Inner Fire, Divine Spirit, or Lady in White in your hand to really shine.
Witchwood Grizzly - This card feels more useful after Lady in White is played. Opponents often average at least 4 cards in their hand. A 3/8 taunt is good but inner fire won't help as much as it does with other cards.
Hungry Ettin - If the board already has 6 annoying murlocs on it then I wouldn't risk adding another. While it will withstand a couple of their attacks, it won't be helpful if this card is immediately cleared. Great card otherwise.
Focuses on outlasting opponent and using Northshire Cleric to increase draws for Lady in White and then subsequent minions after she is played. Minions with effects at end of turn help boost defending taunt minions.
Biggest counters are quick paced decks that summon a lot of minions early on. Mostly Hunter and Shaman decks.
