Deranged Docter is a good third deathrattle for undatakah because some times you need health, while tirion or carine are good deathrattles for board or control. Val'Anyr become over the top in the end of the game especially with your immortal prelate. Even though crstology doesnt draw key peices like undatakah, it draws the cards you dont want to topdeck so when you do other card draw there is a higher chance you draw something good.
